My only concern is the gaskets. Do they need sealant? What do I torque the cover bolts to? How much cleaning do I need to do?
I need one of them For Dummies books...

DON’T PUT SEALANT ON THE GASKETS!!!
Sorry for yelling, but rubber gaskets, or any gasket for that matter, never get sealant.
If you give me the info on the car (year, make, model, engine), I can give you all the relevant torque specs for the job.

2004 Mercedes-Benz S600, 5.5 V12 BiTurbo.
Valve cover gasket replacement and spark plug replacement is what I’m going to attempt.

Valve cover bolts - 8-10 nm.
Spark plugs - 20-30 nm.
Another questions just let me know.
